When I first moved out of home, I was very excited to cook for myself. I had always been a competent cook. But the thing is, whenever I would cook, I’d go all out—ambitious, multi-step meals that required planning, prep work, and a sink full of dishes by the end of it. That’s all well and good when you’re cooking for family or friends, but when you’re cooking dinner for one on a Tuesday night? The novelty wears off pretty quickly.
I needed something that was easy to cook, relatively healthy, and wouldn’t leave me standing in the kitchen for an hour wondering why I didn’t just order takeaway. Enter: this beef and broccolini noodle stir-fry.
I can’t remember exactly where I found this recipe—probably Google, if I’m being honest—but it quickly became my go-to. It takes no longer than 15 minutes to cook, uses simple ingredients, and is a good, proper meal. It’s one of those recipes that reminds me of those first few weeks of living on my own, figuring out what being an adult actually meant. Turns out, it meant a lot of stir-fries.
Makes 4 serves
Ingredients
- 400g fresh hokkien noodles
- 1/3 cup soy sauce
- 1/3 cup oyster sauce
- 2 tbsp tomato sauce
- 2 garlic cloves, finely chopped
- 1 tsp minced ginger
- 2 tbsp rice wine vinegar
- 2 bunches broccolini
- 1 tsp sesame oil
- 400g minced beef
Method
- Mix all of the sauces in a bowl with the garlic, ginger and vinegar. Set aside.
- Blanch the broccolini in a bowl of boiling hot water for 2-3 minutes. Drain and set aside.
- Add the sesame oil to a medium heat and add the beef mince. Brown the minced beef in a saucepan.
- When the beef is almost cooked all the way through, add the sauce, noodles and broccolini and stir all the way through.
- Serve immediately.
