beach club cocktail
Picture this: The sun begins to set as the sky turns shades of coral and lavender. You’re at a pumping beach club, toes in the warm sand, cool summer tunes flood the airways, a gentle breeze carrying the scent of the salt and sea. As you take a sip, you can almost hear the waves and feel the warmth of that summer evening. This is what this cocktail reminds me of.
Over the Christmas period, I spent an afternoon at the Watsons Bay Hotel, celebrating the year just past, and the bar was serving these babies. Perfectly sweet and fruity, with the unmistakable aroma of pineapple and vanilla. Cheers to reliving those golden moments!
Makes 1 serve
Ingredients
- 30ml vanilla vodka
- 30ml pineapple juice
- 30ml cranberry juice
- 30ml passionfruit pulp
Method
- Add ice to a cocktail shaker and add the ingredients. Shake well.
- Strain out the passionfruit seeds with a sieve and pour into glass.
- Enjoy immediately
