Cowboy caviar has been around for a while, but I’ve only just discovered it. I found a nutritionist on YouTube recommending this as a way of adding more veggies to your diet, and she’s totally right. This really is just a bunch of veggies and beans chopped up and you use corn chips to eat them. I have only included veggies that I like, but you could easily add some diced tomato, red onion, replace the jalapeno with capsicum if you don’t want it to be too spicy. Any veggies you like. You could also replace the corn chips with lettuce cups and make it a salad.

I absolutely love the Edgell Snack Time range. They’re basically individual sized tins of beans and veg, mixed with herbs and spices. They’re perfect for adding in some extra protein and fibre to meals, or just having them as a snack on their own. My favourite flavour combination is the Black Bean and Corn with Lime and Herb, it’s the not-so-secret weapon of this dish. However, if you can’t find these, or you don’t have access to this, just use 2 tbsp tinned corn and 2 tbsp tinned black beans, with a 1/2 tbsp of lime juice, and a sprinkle of paprika and coriander (dried or fresh).

Ingredients

  • 1 tin of Edgell Snack Time Black Beans & Corn with Lime & Herbs
  • 1/3 cup diced cucumber
  • 1 tbsp chopped pickled jalapeños
  • 1/4 avocado, diced
  • bowl of corn chips, used to dip the mix

Method

  1. Add all the ingredients to a bowl and serve
