struggle supreme pasta

People sharing their struggle meals has become a bit of a trend online recently, so I thought I would share one of mine.

I had a sandwich a couple of weeks ago that was essentially a supreme pizza, and the flavours just stayed with me. The combination of tomato, capsicum, salami, cheese and olive is just so solid and familiar. I was craving it, but I didn’t want a pizza. So I just threw all the ingredients together into some pasta and discovered a real struggle hero meal.

This is a fairly nutritious, tasty and easy dish that can be whipped up with minimal fuss. You could go crazy and actually cook this over a stove top. You could warm up the tomato paste, add some garlic and onion, some herbs, and add all the other ingredients (minus the cheese), and infuse everything together. But this is a great option when you really can’t be bothered. I like to cook the pasta beforehand and separate into individual serves. Then when it comes to mealtime, I chop up all the other ingredients, mix it in with the pasta, chuck it in the microwave, and then I’m done. Dinner, sorted.

These are just the ingredients that I used based on my taste. I realise that supreme pizzas vary from place to plate, so add in as many other ingredients that you like. Mushrooms, onions, anchovies, bacon, ground beef, whatever you like. It’s your meal, make it your own.

Ingredients

  • 375g pasta of your choice (I like Vetta Smart Protein Spirals Pasta)
  • 1/2 cup tomato paste
  • 1 cup shredded cheese
  • 1 cup kalamata olives, roughly chopped
  • 1 capsicum, diced
  • 150g salami, roughly chopped (I like hot Hungarian salami)

Method

  1. Cook the pasta as per the packet’s instructions. Once cook, drain and throw the pasta in a big bowl.
  2. Add the tomato paste to the pasta and mix well through the pasta
  3. Add the rest of the ingredients and stir through well.
  4. Serve immediately.
