choc chip, nutella & caramel cookies

I am, by my own admission, a cookie fiend. Over the course of a couple of months last year, I spent over $300 on cookies. Three. Hundred. Dollars. On cookies. So when I tell you that you’ll absolutely fiend over these choc chip Nutella and caramel cookies, know that I’m coming from a place of expertise. The good news? These won’t cost you $300, just a fraction of the time and ingredients.

They’re chewy, they’re gooey, they’re chocolatey, they’re salty, all the things a good cookie should be. And thanks to a few pre-made shortcuts, they’re not nearly as hard to make as they look. You’ll have a batch in the oven before you know it. The hard part is not eating them all as soon as they come out of the oven.

A tip for getting these just the right level of chewy is to take them out of the oven slightly before you think you should. The residual heat will continue to cook these while they rest. And a fun seasonal change to this recipe is during easter, substitute the caramello chocolate bars for caramel filled easter eggs.

Ingredients

  • 1/2 cup unsalted butter, melted
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/3 cup white flour
  • 1/2 tsp baking soda
  • 1 cup choc chips, milk or dark is fine
  • 200g Nutella
  • 3 x Cadbury Dairy Milk Caramello Chocolate bars
  • sea salt to sprinkle

Method

  1. In a mixer or large bowl, add the melted butter, sugars, vanilla extract and egg. Mix together until smooth.
  2. To the bowl, add the flour and baking soda. Stir together until combined. Be sure to not over mix. Now add the choc chips.
  3. Scoop the cookie dough onto a lined baking pan. Each cookie should be about a tablespoon and a half of dough, in round balls. Don’t worry, they spread out in the oven.
  4. Place the cookie dough balls in the fridge for a minimum of 20 minutes.
  5. Now, preheat oven to 180 degrees Celsius
  6. Take the cookie dough balls out of the oven, and make a small, shallow well in the middle of each ball. Fill the well with a teaspoon of Nutella, and place a square of the Cadbury Milk Caramello Chocolate. Sprinkle some sea salt over the Nutella and chocolate.
  7. Pop in the oven for 9-10 minutes. Keep an eye on these, as they cook really quickly. When they start to look a little more golden around the edges, that’s a good clue.
  8. Take out of the oven and rest for 5 minutes (if you can stand it).
  9. Enjoy… if you haven’t already scoffed down a hot gooey chocolately cookie
