During a recent grocery shop, I was walking the aisles of Aldi, not feeling very inspired. I didn’t feel like anything in particular. I really didn’t feel like cooking anything that required a lot of prep, or cleaning, or anything that took longer than 15 minutes. I just wanted a flavourful meal made up of veggies, some spice and texture. Then, I was struck with inspiration.

For the longest time, waffles always felt so exotic to me. Growing up, like most homes, we didn’t have a waffle iron. So whenever there was an opportunity to have waffles, I jumped at the chance. But now, I am an adult and have control of my finances and kitchen appliance decision making, I own a waffle iron and can make them whenever I want.
peri peri sauce – claire’s way

I am a fan of hot sauces, but I have never really experienced proper peri peri sauce. I’ve been to Nandos in my life, but there’s not a store near me, so it’s not something I have a lot. So I thought I would try and make one myself. So thanks for a recipe from Pretty Delicious, I made a batch using their recipe.
blueberry stud muffins

This is a blueberry muffin with a twist. Instead of just throwing in fresh blueberries, you boil the blueberries in a chamomile tea mixture, which can later be used as an iced tea. And rather than just having a boring muffin top, these are topped with a brown sugar and cinnamon crumbly streusel. A great afternoon treat.
broccoli and crispy chicken salad

Not all salads need to have lettuce, and this is a good example of one that doesn’t. I like to use a bed of steamed broccoli as the base and then build on top. This is beyond tasty with a delicious breaded chicken, a little cheese, bacon, as well as some carrot, corn and slivered almonds. For the dressing, I like to have some creaminess, but not an overwhelming flavour. I like to use cashew cream, but you could use a ranch or caesar salad if you feel it.
blueberry chamomile iced tea

I was baking some blueberry muffins, and as a part of the recipe, I needed to create a hydration solution for the blueberries. The solution is made of chamomile tea, balsamic vinegar and sugar. Once I had used the blueberries, I was left with this delicious brew that turns out to be the perfect afternoon iced tea cocktail.
