adult rocky road
I think everyone is familiar with the sweet treat, Rocky Road. It is one of the easiest desserts you can make. Melt some chocolate, throw your favourite crunchy bits in, chuck it in the fridge, super easy. This is a slightly elevated version of rocky road, for a more adult taste. I like to use dark chocolate instead of the sweeter mixer chocolate, and I prefer to use cashews and pistachios instead of peanuts. The Turkish Delight offers a different texture to your typical fruit. And finishing off with the flaked salt offers another interesting element.
Ingredients
- 180g ‘Old Gold’ Dark Chocolate
- 50g mini marshmallows
- 80g pistachios, roughly chopped
- 80g cashews, roughly chopped
- 180g Turkish Delight, chopped
- Big Pinch of flaked salt
Method
- Melt the dark chocolate in a bowl. I like to melt the chocolate in the microwave in 30 second increments to prevent the chocolate from burning. You can use the stove if you feel more comfortable.
- Add the rest of the ingredients to the melted chocolate and combine well. Make sure all the ingredients are well covered.
- Spread the mixture over a baking sheet covered with baking paper. Spread the mixture to whatever thickness you like. The thinner you spread, the quicker it sets. Then sprinkle the salt over the top.
- Put in the fridge or freezer until set..
