fancy muffins
These muffins are only fancy in taste, not in preparation. This is something that I like to make when I want something insanely delicious, but not overly complicated. There are a few different elements to put together, but all quite easy. Remember, this is your meal. Make additions or subtractions to your likely. The important thing is that you enjoy your muffin!
Ingredients
Serves 1
- 1 English Muffin
- 1 piece of marinated Coles Lemon & Herb Marinated Breast Steak (or you can marinate your own chicken breast in a lemon and herb marinade)
- 1 tbsp Red Rock Deli Basil Pesto, Pecorino & Cashews, or any other chunky pesto you like
- 1 muffin sized slice of butternut pumpkin (I prefer butternut, but you can choose whichever is your favourite)
- 3 pieces of Coles Marinated Feta, crumbled
Method
- Slice the pumpkin into 1/2cm slices and bake in 180 degrees Celsius/350 degrees Fahrenheit oven for 25 minutes, or until slightly tinged on the outer edges. You really can cook these to your specific liking.
- Cook the chicken steak on a medium/high pan for 8 minutes, turning frequently, until cooked all the way through and juices run clear. If you have a meat thermometer, your chicken will be properly cooked if it reaches 74 degrees Celsius/165 degrees Fahrenheit. Never eat undercooked chicken!
- Toast your English Muffin until toasted to your liking.
- Now is time to plate up. Place your English Muffin on a plate, inside sides facing up. Spread the pesto on both slices, then place the pumpkin, then the chicken, then crumble the feta over the top. But like I said before, it is your meal, if you want to switch up the order, go for it!
