Last year when I was in Mexico, I had some tacos at a local place. This place was famous for carnitas, and the locals would come and buy them by the kilogram. They were crispy and salty and exactly what you want from a mouth-watering, slow-cooked pork. I came across this recipe a few years ago when I was on a bit of a health kick. The base of this comes from Jesinta Franklin’s Live a Beautiful Life, and I’ve adjusted it to my tastes. This is the perfect summer dish. It’s healthy, it’s tasty and easy to prepare.

During a recent grocery shop, I was walking the aisles of Aldi, not feeling very inspired. I didn’t feel like anything in particular. I really didn’t feel like cooking anything that required a lot of prep, or cleaning, or anything that took longer than 15 minutes. I just wanted a flavourful meal made up of veggies, some spice and texture. Then, I was struck with inspiration.
