
I came across this recipe a few years ago when I was on a bit of a health kick. The base of this comes from Jesinta Franklin’s Live a Beautiful Life, and I’ve adjusted it to my tastes. This is the perfect summer dish. It’s healthy, it’s tasty and easy to prepare.

Ingredients
- 1 cup cooked quinoa/brown rice mix (i like to use the microwaveable quinoa brown rice mix)
- 1 tbsp coconut oil
- 2 cloves garlic, minced
- 3 spring onions, chopped
- 1 long red chilli, chopped
- 2 tbsp lemongrass paste
- 500g pork mince
- 2 tbsp soy sauce or tamari
- 2 dashes sesame oil
- 1 cos lettuce, separated into cups
- 1 carrot, diced
- 1 cucumber, diced
- handful bean sprouts
Method
- Cook the quinoa brown rice in the microwave as per the packet’s instructions
- Heat the coconut oil in the fry pan or wok over med-high heat. Add the garlic and spring onions to the pan, and cook for 45 seconds, or until fragrant.
- Add the chilli and lemongrass to the pan and cook until fragrant.
- Add the pork mince and stir until the pork is about half cooked.
- Stir in the rice/quinoa to the mince, soy sauce and sesame oil, and cook until the pork is totally cooked through.
- Spoon the pork mix into the lettuce cups and top with carrot, cucumber and bean sprouts.
- Serve immediately.
