I came across this recipe a few years ago when I was on a bit of a health kick. The base of this comes from Jesinta Franklin’s Live a Beautiful Life, and I’ve adjusted it to my tastes. This is the perfect summer dish. It’s healthy, it’s tasty and easy to prepare.

serves 4

Ingredients

  • 1 cup cooked quinoa/brown rice mix (i like to use the microwaveable quinoa brown rice mix)
  • 1 tbsp coconut oil
  • 2 cloves garlic, minced
  • 3 spring onions, chopped
  • 1 long red chilli, chopped
  • 2 tbsp lemongrass paste
  • 500g pork mince
  • 2 tbsp soy sauce or tamari
  • 2 dashes sesame oil
  • 1 cos lettuce, separated into cups
  • 1 carrot, diced
  • 1 cucumber, diced
  • handful bean sprouts

Method

  1. Cook the quinoa brown rice in the microwave as per the packet’s instructions
  2. Heat the coconut oil in the fry pan or wok over med-high heat. Add the garlic and spring onions to the pan, and cook for 45 seconds, or until fragrant.
  3. Add the chilli and lemongrass to the pan and cook until fragrant.
  4. Add the pork mince and stir until the pork is about half cooked.
  5. Stir in the rice/quinoa to the mince, soy sauce and sesame oil, and cook until the pork is totally cooked through.
  6. Spoon the pork mix into the lettuce cups and top with carrot, cucumber and bean sprouts.
  7. Serve immediately.
