thai green curry pork meatballs

During a recent grocery shop, I was walking the aisles of Aldi, not feeling very inspired. I didn’t feel like anything in particular. I really didn’t feel like cooking anything that required a lot of prep, or cleaning, or anything that took longer than 15 minutes. I just wanted a flavourful meal made up of veggies, some spice and texture. Then, I was struck with inspiration. Aldi has lots of premade options, many of which don’t require chopping, so I got myself a tray of meatballs, a bag of slaw mix, a green curry stir through, and some hokkien noodles. I’m sure I’m not the first to come up with green curry meat balls, but it’s not something I’ve had before. But the spice, texture and flavours hit the spot. I just had to share it.

Ingredients

  • 420g pork meatballs
  • 400g bag of slaw mix
  • 500g Curry Up Thai Green Curry Simmer Sauce
  • 450g Hokkein Noodles

Method

  1. Cook the meatballs by whatever means you like. I cooked these in the airfryer at 180 degrees for 15 minutes.
  2. Heat a large frypan on medium and add your meatballs and simmer sauce. Bring the sauce to the boil.
  3. Once boiling, drop the heat to low-med, and add your slaw mix and noodles. Stir all the ingredients through until coated with sauce and well heated
  4. Serve immediately
