waffles
For the longest time, waffles always felt so exotic to me. Growing up, like most homes, we didn’t have a waffle iron. So whenever there was an opportunity to have waffles, I jumped at the chance. But now I am an adult and have control over my finances and kitchen appliance decision making, I own a waffle iron and can make them whenever I want.
In celebration of Galentine’s Day, the holiday that celebrates and appreciates your female friendships, I thought I would share my favourite waffle recipe. These waffles come out so soft and fluffy. The flavour is sweet, but still versatile. You can match these with the typical strawberries, syrup, whipped cream and marshmallows, or you could go savoury with a fried chicken and jalapeño combo (my personal favourite). The options are endless.
Makes 4 waffles
Ingredients
- 1 1/3 C White Flour
- 1 tbsp Baking Powder
- 1/2 tsp salt
- 2 tsp sugar
- 2 eggs, seperated
- 1/2 C butter, melted
- 1 3/4 C milk (any milk is fine)
Method
- In a bowl, mix all the dry ingredients together
- Seperate the eggs. Add the yolks to the dry ingredients. Keep the egg whiles in a seperate bowl.
- Beat the egg whites until moderately stiff. Set aside.
- Add the milk and melted butter to the dry ingredients and combine well.
- Fold the egg whites into the mixture. Remember to be gentle so not to lose all that air you’ve whipped up.
- Ladle the mixture into your waffle iron and cook following the waffle iron’s instructions.
- These are best served immediately.
